OWNERS HOLLY & WES BIGGERS
Holly and Wes have long been successful Colorado business owners and have leveraged their years of management experience, enthusiasm for people and personal love of food in personally directing the activities of Bistro Boys Catering.
Holly is a Colorado native who attended CU Boulder. When not enjoying day trips around the state to investigate new and deliciously delightful menu items, or researching the most recently introduced event themes in New York or LA, she can be found in the stands cheering on her daughter’s high school marching band and swim team.
From her very first job to her ownership of Bistro Boys, Holly has been involved in event planning. Her background includes managing student events during college; destination conventions; vendor conferences; and national trade shows. As a Navy wife, Holly lived throughout the eastern US, giving her the opportunity to participate in catered affairs from formal ceremonies in Washington DC to military galas on numerous American bases. It was through these experiences that Holly fell-in-love with the catering side of events, and it was then she realized her calling. After moving back to Colorado, Holly spent several years at home raising her son and daughter, becoming heavily involved in volunteer work with the Littleton school district and applying her passion for inspired event planning and catering during that time.
Wes earned an Aerospace Engineering degree from CU Boulder before becoming a submarine officer in the U.S. Navy. During his final shore tour, he served as Public Relations Officer and supervised the weekly graduation of 1000 new Sailors, with as many as 5000 family and military and government dignitaries attending these events. Upon his honorable discharge as a Lieutenant, he decided to apply his technical and communication skills to the business world, and worked as a Product Manager in the Telecom industry for 12 years. However, like Holly, Wes yearned to be an entrepreneur and jumped at the opportunity to take Holly’s catering dream to fruition, and made a commitment to operate Bistro Boys as “Denver’s Premier Catering Experience”.
Holly and Wes’ love of people and the catering business; their deep commitment to Colorado; and their dedication to excellence have proven to be a recipe for success…for themselves, their family, and every Bistro Boys customer they serve.
CHEF JOSEPH BEGGS
A graduate of Johnson and Wales University with a degree in Culinary Arts, Chef Joseph Beggs is happiest in the kitchen.
At a very early age he fueled his curiosity for unique flavors and fresh ingredients while roaming the fields and farms stands of his Indiana home. Dedicated to honing his craft, Chef Joe began his career in the kitchens of prestigious Indianapolis country clubs, including the esteemed Highland County Club and the city’s prominent Woodland Country Club, where he quickly worked his way to Executive Chef in less than five years.
Recognized for his unique talent, he was offered the opportunity to work with two nationally-known mentors, Tony Hanslits, Executive Chef at Tavola di Tosa and Regina Mehallick, Chef at R Bistro. At the urging of his mentors, Joe moved to Denver in 2003 to attend Johnson and Wales.
Immediately following Culinary Arts graduation, Chef Joe served as the Executive Chef for Three Tomatoes Catering. During that time, he received the Icon Award for “Best Food Presentation” from 2006 through 2009. Chef Joe also received the Denver Public Schools mentoring program “Employer of the Year” award from 2005 thru 2009, conferred through the Colorado Governor’s Office.
Calling on his boyhood passion for fresh and unique foods, he continually challenges himself by constantly creating new and innovative recipes, designed to dazzle guests from all over the country.
